Crispy and Sweet: Jalebi Recipe

Ingredients:

For Batter:

  • 1 cup all-purpose flour (maida)
  • 1 tablespoon besan (gram flour)
  • 1/4 teaspoon baking powder
  • 1 tablespoon yogurt (curd)
  • 1 teaspoon lemon juice
  • Water (as needed to make a thick batter)
  • A pinch of orange food color (optional)
  • Oil or ghee for frying

For Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • A few saffron strands (optional)
  • 1/2 teaspoon cardamom powder
  • 1 teaspoon rose water (optional)

Instructions:

  1. Prepare Sugar Syrup:

    • In a pan, combine sugar and water. Heat over medium heat until the sugar dissolves completely.
    • Add saffron strands (if using) and cardamom powder to the syrup. Simmer for a few minutes until it reaches a one-string consistency.
    • Stir in rose water (if using) and turn off the heat. Keep the syrup warm.
  2. Make Batter:

    • In a mixing bowl, combine all-purpose flour, besan, baking powder, yogurt, lemon juice, and orange food color (if using).
    • Gradually add water while whisking to form a smooth, thick batter. The consistency should be thick enough to coat the back of a spoon.
  3. Fry Jalebis:

    • Heat oil or ghee in a deep frying pan over medium heat.
    • Pour the batter into a squeeze bottle or a piping bag with a small nozzle.
    • Squeeze the batter into the hot oil in a circular motion to form spirals or concentric circles. Start from the center and work your way outwards.
    • Fry the jalebis until they are golden brown and crispy on both sides. Remove them using a slotted spoon and drain excess oil on paper towels.
  4. Soak in Sugar Syrup:

    • Immediately transfer the fried jalebis into the warm sugar syrup. Let them soak for 1-2 minutes, ensuring they are fully coated with the syrup.
    • Gently lift the jalebis from the syrup and place them on a serving plate or tray.
  5. Serve and Enjoy:

    • Serve the jalebis warm or at room temperature. They are best enjoyed fresh when crispy on the outside and syrupy on the inside.
